Watermelon Cucumber Salad

Watermelon is one of those foods that I never think of to cook with. Since it is so perfect on its own, I don't think I've ever really eaten it any other way than just on its own. However refreshing watermelon is solo, its sweetness and juiciness go perfectly with cucumber. Then, when you add lime juice, mint and cilantro, its just a food party that you simply cannot miss! Oh, and let's not forget about the feta.

This is also a great time to make this simple salad as a meal or a side because we're in the middle of summer and so many foods are at their prime. So, take advantage and combine them together to make something great during the week or to celebrate the weekend. Happy Wednesday for now!

Watermelon Cucumber Salad
from Miss Anna Cakes
serves 4

Ingredients:
6 cups watermelon, cut into 1-inch pieces
1 medium cucumber, cut into cubes
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice
2 teaspoons olive oil
1/4 teaspoon salt
1/2 cup crumbled feta cheese

Directions:
Combine the watermelon and cucumber in a medium bowl. In a separate small bowl, whisk together the mint, cilantro, lime juice and olive oil. Add to the watermelon and cucumber, along with the salt, and toss to coat. Sprinkle with the feta. Be sure to get rid of any watermelon juice that may have dripped to the bottom of the bowl before you add the feta.

  1. Watermelon has been my jam this summer! That doesn't really make sense does it? It has been a big craving of mine and I can finish one myself in a couple days. But, I haven't used it in a recipe! This would be an awesome way to do that :)
